Oven-Baked Apple-Almond Pancake

2 large eggs
½ cup milk
¼ tsp. almond extract
½ cup flour
¾ apple, peeled, cored & sliced very thin

Mix all ingredients then whisk briskly.
Melt a bit of butter in each of 2 baking pan (about 5 " sq.)
Pour about 1/2 cup mixture into each pan.
Bake at 450° until edges are golden; cooking time depends on pan.
Add whipped cream, unpeeled apple slices, and cinnamon and
drizzle with maple syrup from Vermont!
