Adair's World Famous PopoversThis recipe yields 6 enormous popovers.Preheat oven to 400. 6 eggs 6 tablespoons melted butter 2 cups milk 2 cups flour a pinch of salt While butter is melting beat 6 eggs in a large bowl. While the butter is cooling add teh 2 cups milk to the eggs and whisk again. Add cooled butter to the eggs and milk then add the 2 cups flour and pinch of salt. Whisk or beat until still a bit lumpy but all of the large lumps are gone. Spray 6 6-ounce custard cups with no-stick cooking spray. Fill the custard cups to 1/4 inch from the top. Cook in preheated oven for 50 minutes. Do not open the oven door until after at least 45 minutes or you risk having deflated popovers. A great variation is to add a bit of sugar and cinnamon to the recipe. They don't pop as much but the flavor is wonderful! Enjoy! |
