Spicy Shrimp Salad with Garlic ToastDressing:3 tablespoons. sugar 4 tablespoons fish sauce 1/3 cup lime juice 2 tablespoons prepared chili sauce Salad: 3/4 pound cooked shrimp 1/4 cup chopped fresh mint leaves 1/4 cup chopped fresh cilantro leaves 1 small red onion, thinly sliced 2 green onions, trimmed and thinly sliced 2 cucumbers, peeled and thinly sliced Bibb lettuce leaves Garlic Toasts: Clove of fresh garlic, peeled & cut in half French bread, sliced 1/4 inch thick rounds Olive Oil, high quality Brush french bread rounds with olive oil and toast (broil) in oven til desired level of crunch is achieved (about 5 minutes). Remove from oven and rub bread rounds with fresh garlic half. In a small bowl, combine all the dressing ingredients. Stir until the sugar dissolves completely. In a large bowl, combine all of the salad ingredients except the lettuce. Pour the dressing over and toss to coat. To serve, place the lettuce leaves on individual plates. Mound a portion of the shrimp salad on top of the leaves. Serve as a first course with crunchy garlic toasts. Serve immediately. |
