First Farm Inn Kentucky Tomato SoupThis is good made from fresh garden tomatoes pureed in the blender. Be sure to add a little sugar to cut the acid taste of the fresh tomatoes. Also good with fire roasted or other seasoned canned tomatoes.Onion Tomatoes or tomato sauce (roughly 2 cups) 2 Tbs. butter. 1 to 2 Tbs. flour 1½ cups milk 2 Tbs. sugar salt pepper In a 2-quart saucepan, sauté finely diced onion (just a tablespoon if you’re not an onion fan, a whole small onion if you like it) in 2 Tbs. butter. Add 1 to 2 Tbs. flour, depending on how thick you like your soup. Add roughly 2 cups pureed fresh or canned tomatoes and heat. Warm 1½ cups milk (can be skim) in a microwavable container until hot. Combine. Add salt (1 tsp.) and pepper (3/4 tsp.) to taste. Add sugar 1 tsp. at a time, tasting after each addition -- if you need to reduce the acidic taste of the tomatoes. (Sugar is already added to canned tomatoes.) This is so good and easy, you’ll never buy a can of preservative-laden tomato soup again! Serves 2-4. |
