Red Rocker Inn Caramel Pecan Sticky Bun CookiesMake Caramel Pecan filling and keep warm and soft:cook together in small saucepan: 1/4 cup butter 1/2 cup powdered sugar 3 Tablespoons dark corn syrup Cook 2 or 3 minutes and add: 1/2 cup chopped pecans For Cookie Dough: Cream Together: 1 cup butter, softened 1/2 cup granulated sugar 1/2 cup dark corn syrup Add and mix well 2 egg yolks 1/2 teaspoon salt 1 teaspoon fresh grated orange peel blend in: 2 1/2 cups flour form 1 1/2 inch balls on baking sheet. Bake 6 minutes in convection oven at 325 degrees. (Conventional oven at 350 degrees). Remove from oven and brush each cookie with egg white mixed with 1 tsp water. Press finger or small spoon into each cookie to make a deep indention. Fill with 1/2 teaspoon pecan filling and return to oven for about 2 minutes until cookies are lightly browned. Cool and remove from cookies sheets. Makes 2 1/2 dozen cookies. |
