Black walnut and cranberry Buckwheat PancakesIngredients: Serves 6Organic buckwheat flour Fresh uncaged country eggs Rice milk or any other milk or cream Black walnuts Fresh cranberries This is a delicious winter pancake full of flavor! Mix your flour, 2 eggs and milk to pancake batter consistency. Buckwheat flour is heavier and no need to add baking powder, just let them be more like a flat cake. Place olive oil on the griddle and heat to 375, place pancake batter rounds on griddle and add nuts and cranberries on the top of each pancake. Turn and grill other side. For extra flavor, grill the nuts in olive oil before you add them to the pancakes. Serve with fresh warmed maple syrup by the fireplace! Enjoy! |
