Landis Shores Smoked Gouda & Spinach Quiche

5 eggs
1 ½ cups of ½ & ½
8 oz cottage cheese
6oz butter, melted
½ c Flour
½ tsp. Baking Powder
¼ tsp. Salt
¼ tsp. Baking Soda
½ tsp. Garlic-Pepper
4 oz Smoked Gouda Cheese, Grated
5 oz (½ package) of Spinach,Thawed & Drained
½ an onion, diced (about 1 cup)
Roma Tomato, sliced thinly
1 Tbs. Olive Oil
Paprika


Sauté the diced onion in olive oil until soft, set aside.

Put 1st nine ingredients (on left) into a blender. Blend on medium until smooth.

Pour into a bowl and add ½ the Gouda plus all the Spinach & Sautéed Onion.

Mix together with spoon. Pour into buttered individual soufflé dishes (6 or 8 oz). Leave ¼” at top so quiche can rise without overflowing.

Sprinkle other ½ of the smoked gouda over the quiche and garnish each with sliced Tomato and sprinkle of Paprika.

Bake at 350 º for 20-25 minutes, until top is browned and center appears firm. Serve immediately.
