Breads : Muffins and Scones : Easy Banana Muffins
Easy Banana Muffins3 ripe bananas1 c. sugar 2 eggs 1 t. baking soda 1 t. baking powder ½ t. salt 2 c. flour 1 stick butter, melted 1 t. vanilla 1 scant t. cinnamon A little nutmeg and cloves ¼ c. applesauce Mash bananas in medium bowl, add sugar and slightly beaten egg and mix well. Add melted butter. I put the 2 c. flour, baking powder, baking soda and salt and dump it through a sieve into a bowl. Add to wet ingredients. Stir just until well mixed. Bake at 365 degrees for 12 minutes, turn in oven and bake a few more minutes until done. Top oven makes tops pretty brown but they are okay. Makes anywhere from 12-18 muffins. I use the blue handled ice cream scoop to fill the muffin cups which have been sprayed with PAM. |
