Carole's Healthy MuffinsTry these delightful muffins for a healthy breakfast!2 cups whole oats 1 cup whole wheat flour 1 cut walnuts 1/2 tsp cinnamon 1/4 tsp sea salt 1 tbl baking powder 2/3 cup water 1 egg 1/2 cup maple syrup 1/2 oil 1/2 raisins Mix dry ingredients (smoother if you mix in Cuisinart with chopper blade to break up oats and walnuts). Beat egg Mix in egg and all wet ingredients. Stir in raisins last. Spoon into greased muffin pan (makes 12) Bake at 350 for 20 minutes (check as they cook, time varies with oven) Enjoy! |
