Thelma's Banana Nut Bread with a history!1/2 cup vegetable oil1-cup sugar 2 eggs beaten 3 ripe bananas mashed to a pulp 3tbl milk 1/2tsp vanilla 2 cups flour 1tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1/2 cup chocolate chips (optional) 1/2 cup chopped nuts (optional) 1) Preheat oven to 350 deg. 2) Beat together oil and sugar, then add eggs and bananas, add milk and vanilla. 3) Sift together flour, baking soda, baking powder and salt. 4) Mix all ingredients and add nuts and chocolate chips. 5) Prepare 9x5x3 loaf pan, grease pan and place waxed paper sheet on bottom of pan. 6) Pour batter into pan. 7) Bake for one hour. 8) Cool well on wire rack for 5 minutes then remove from pan. 9) This recipe can be adapted for muffins but just bake for 20 minutes at 350 deg. And yields 24 muffins. Thelma’s Banana Bread recipe has been passed down for 3 generations. Over the past years as a Nanny for a family of seven, I have enjoyed many afternoons making this keepsake recipe with the third generation of children. Mini chocolate chips have been added to satisfy their sweet tooth. Memories are made and remembered while sharing this recipe with B&B guests. |
