Celebrate with gourmet roll-upsPurchase the following:burrito rounds, large size, whole wheat, 1 large package 1 lb. thin sliced deli meat (may use roast beef, turkey, chicken, or shrimp fresh pesto, 1/2 cup or to taste 1 pound fresh spinach leaves 1/2 cup mayonnaise 1 bunch fresh parsley Makes hors d'eouvres for 8 Mix pesto and mayonnaise to taste. I use a bit more pesto than mayonnaise, but taste here and get what you like the best. Spread mix on burrito round. Lay deli meats or seafood in thin layer. (If you use shrimp, chop in blender with a bit of onion and lemon juice before laying over the burrito) Layer spinach leaves and parsley on top of meats. Roll the burrito tightly and slice in 3/4 inch tidbits! Arrange on hors d'eouvre tray. Watch them disappear! We use this for many of our weddings. |
